AUTUMN AT THE COOKERY SCHOOL

Autumn is a season we love and embrace here at the Cookery School. Being in the middle of a working farm, we always take advantage of what this beautiful time of the year has to offer. Our Market Garden is bringing us an abundance of delicious produce such as squash, celeriac, leeks, jerusalem artichokes, celery, sweet corns, apples and others. Our Tutors are constantly going out there to pick the freshest produce available and bringing back to the Cookery School where they will magnify them with easy steps and a minimum of manipulation to ensure a maximum of nutrients, colours and vitamins.

Foraging is also an activity that we have at heart, especially in Autumn. With the help of our in-house Environmental Scientist Tim Field telling us what is edible or not, we spend sometimes hours exploring what is around us, bring back new combination of flavours and new ideas for our dishes.

To take full advantage of the season and for the pleasure of your buds, we will be hosting two events in November. The first one is our Supper Club in our Pimlico Farmshop in London on the 2nd. And the second is a Table Talker on the 25th of November with Tim Field as guest star. He will be talking about wild food and the natural, sustainable treasures that can be foraged and found at this time of year.
