SEASONAL DINNER PARTY
Ever popular, our Seasonal Dinner Party course will give you the confidence to cook delicious seasonal recipes for dinner parties, or any occasion, that will impress your guests on all fronts with presentation, taste and timing.
JOURNEY THROUGH PROVENCE
Provencal cookery is rich with warm, summery flavours and recipes created with fresh, seasonal ingredients. We are lucky enough to have a glut of some of these wonderful vegetables and herbs in our organic Market Garden come summer, as well as delicious ingredients from our sister estate in the South of France, Château Léoube. From olives, capers and herbs to beautiful fish, lamb and poultry, our Cookery School team will guide you through a series of classic flavour combinations and recipes
SEASONAL ORGANIC SUPPERS FOR EVERYDAY
If you’re short on time, but don’t want to compromise on delicious evening meals, our Seasonal Organic Suppers class is the perfect course for you. Using organic, seasonal produce from our Farm and Market Garden we will create wonderful dishes that you will look forward to preparing, no matter how busy you are.

After pouring you a glass of Prosecco we will introduce you to a series of delicious festive canapé ideas, demonstrating techniques and methods so that you can then create your own platter of festive nibbles.
6 Week Daylesford Chef Experience
Running over six consecutive evenings, this course is designed to give anyone with an interest in cookery the chance to learn invaluable skills to elevate their cooking to new heights.
Even though fish and shellfish are a firm favourite for many on restaurant menus, the preparation and cooking of these delicious, delicate ingredients can be a little intimidating. In this course we focus on how to select, prepare and cook an array of fish and shellfish, covering a variety of different cookery techniques.

his full day course is designed to inspire you with confidence and ideas to take your al fresco eating to the next level, cooking and sampling organic meat and vegetables from our Farm and Market Garden.

FOOD STYLING WITH ROSANNAGH HILLEARY
An image can be worth a thousand words and when it comes to running a successful food blog, increasing your social media following or promoting your business, getting your imagery right has never been so important. Join us for this hands on day of food styling and photography.
Join The Cookery School and Garden Room teams for this half day course combining two of our favourite activities – floristry and cookery. Joined by our Head Florist, your morning will start learning how to create beautiful, seasonal table arrangements using natural materials and flowers – yours to take home at the end of the day.
WILD & FORAGED
Foraging is a traditional, age-old skill that we are passionate about at The Cookery School, a skill that offers the opportunity to harvest and eat seasonal ingredients that taste delicious and cost you nothing. This one day course will give you a fascinating insight into the best wild foods available on our doorstep.
DAYLESFORD MASTERCLASS: Perfect Sauces
An essential introduction to sauce making, this half-day class will cover the fundamental principles and techniques behind a variety of classic and modern sauces. Including stock-based sauces, emulsifications such as hollandaise and dressings such as sauce vierge or salsa verde.
FEATHER & FUR: GAME PREPARATION & COOKERY
Over the course of the day you will spend some time outside with our resident forager, Tim Field who will also join us in The Cookery School to demonstrate how to pluck, dress and prepare your game before cooking, giving you all the chance to get hands on learning how to master these techniques.
INSPIRING DISHES FROM THE MARKET GARDEN
Our 25-acre organic Market Garden is the source of over 250 varieties of heritage fruit and vegetables. On this course we are joined by our Head Market Gardener, Jez, who will take you on a guided tour of the garden, with the chance to harvest your own veg box before taking it back to the Cookery School to turn it into a number of sensational dishes.
Join us at The Cookery School for a day designed in conjunction with our sister company, Bamford, makers of luxury, artisan and natural clothing, accessories and body products. Through this full day at our Cotswold farm, we will introduce you to the philosophy behind this unique company and the incredible journey each beautiful product takes from conception through to finished article.
BREAD & BAKING
ARTISAN BREAD MAKING
Join us to learn some of the secrets behind our delicious loaves from sourdoughs to seeded loaves, rolls, multi-grains and enriched doughs. Using traditional, artisan methods and purely organic ingredients we will cover all the skills you need to be able to recreate delicious homemade loaves at home.
THE ART OF AFTERNOON TEA
After pouring you a glass of Prosecco, our Cookery School team will guide you through a number of recipes, covering baking, pastry-making and presentation, enabling you to create your own traditional afternoon tea display which will include tarts, cakes, biscuits and savoury treats.
Over the course of the day we will cover a number of basic recipes such as sweet pastry, tart fillings and custards as well as more advanced recipes such as marshmallows, curds and flavoured ganaches.
DAYLESFORD MASTERCLASS: PERFECT MACARONS
A French classic, delicate and delicious macarons are notoriously tricky to perfect. Join us for this half day masterclass in The Cookery School where we’ll show you all of the tips and techniques you need to master these indulgent treats.
HEALTH & WELLNESS
FEED YOUR BODY & MIND
Eating well has a huge effect both on how we feel and how our brains and bodies function. Our Feed Your Mind courses explore the relationship between good nutrition and our wellbeing, taking a look at which foods can enhance our mood and help us feel at our best.
FERMENTS TO EAT AND DRINK
This half day introduction to fermented food and drink, explores the history and health benefits of fermented foodstuffs such as kombucha, kimchi, kvass and berry sauces over a series of tasters, demonstrations and hands-on sessions with our Cookery School tutors.
EAT TO BE HEALTHY
Health and nutrition has always been very close to our hearts, and to those of our customers. This new addition to our course calendar will celebrate delicious, seasonal recipes that are naturally free of refined sugars, dairy and wheat flour.
SPICES FOR HEALTH
Spices have long been celebrated for their health benefits, in Ayurvedic, Chinese and Western cuisines and holistic practices. This half day course in The Cookery School will explore the recipes and thinking behind the use of spices to aid healing and good digestion as well as their anti-inflammatory properties and beneficial effects on blood sugar and longevity.
THE RAW KITCHEN
Our Raw Kitchen full day course will inspire you to create dishes using ingredients in their most natural and nutritious form. Join us for a full day course which explores the world of raw food with lots of inspiration from around the world, including a range of cuisines types, age-old and modern techniques.
AYURVEDIC COOKERY WITH VETTRI SELVAN
Join us for an afternoon spent learning all about the principles of Ayurvedic cookery and the philosophy behind its teachings. Ayurveda is an ancient practice of holistic healing that teaches you to be in harmony with the laws of nature – the very roots of the word mean ‘the science of life’.
B PEACEFUL: MINDFULNESS & COOKING FOR HEALTH
Created in conjunction with the Bamford Haybarn Spa, this is a day designed to relax and soothe both body and soul. Your day will begin with a 90 minute Mindfulness session in the Haybarn’s beautiful loft studio, giving you the chance to reconnect with your inner and outer worlds. As the class comes to an end, you will be guided to The Cookery School where we will welcome you with reviving juices and herbal teas.
B WHOLE: COOKERY & HAYBARN SPA DAY
Following a 90 minute yoga class in our Bamford Haybarn Spa we’ll create a series of delicious and nutritious dishes which will be enjoyed together for lunch. The course will then end with a 45 minute deep tissue massage, giving you the chance to completely unwind before your day with us comes to an end.
CHILDREN & TEENAGERS
Our Budding Chefs classes provide the perfect introduction to cookery for children, inspiring them to think about where their food comes from as we explain the story of our organic Farm and Market Garden, getting them hands-on creating their own dishes with delicious, seasonal ingredients.
FLYING THE NEST: STUDENT COOKERY SKILLS
Leaving home for College or University is the perfect time to arm youngsters with the essential skills they need to cook healthy nutritious meals for themselves. This 3-day course aims to give students a relaxed yet informative understanding of a variety of simple and effective principles that will allow them to cook with confidence.
BEYOND BEANS ON TOAST: TEENS COOKERY
A course that provides the perfect introduction to cookery for teenagers, inspiring them to think about where their food comes from as we explain the story of our organic farm and Market Garden, getting them hands-on creating their own dishes with delicious, seasonal ingredients.

Our Family Cooking classes are a wonderful opportunity for parents and children to join us together in The Cookery School for a fun-filled day of festive cooking and eating.
NEW: PREGNANCY & NEWBORNS
BLOOM: ORGANIC COOKING FOR BABIES & TODDLERS
With so much conflicting advice around feeding babies and toddlers, it can be difficult to know where to start or how to choose the best way forward for your children. Using organic produce from our Farm and Market Garden we will explore a variety of nutritious ingredients and cooking techniques designed to give maximum nourishment whilst being tasty enough to keep your baby’s naturally curious taste buds alive.
BLOSSOM: COOKING FOR PREGNANCY & NEWBORNS
During pregnancy and when nursing a newborn, nutrition and healthful eating becomes hugely important for you and your little one. It’s also a time when you might experience cravings or nausea and feel more tired and time-pressed than ever. This half day course will explore simple ways to include nourishing ingredients in your home cooking and suggestions to ease nausea and indigestion as well as exploring how your diet can support breast-feeding and aid recovery from child birth.

Our Table Talkers Suppers are designed to encourage conversation as we welcome special guests and to cook around our intimate chefs table. Each of our special guest will utilise the organic ingredients from our farm and Market Garden to create a delicious four course dinner with accompanying wines from our cellar.
THE DAYLESFORD HEALTH & WELLNESS RETREAT
Join us for a restorative weekend at Daylesford, experiencing the best of both The Cookery School and Bamford Haybarn Spa, whilst staying in our beautiful Cotswolds Cottages.
