Charred Purple Sprouting Broccoli with Goat’s Cheese, Black Olives & Capers
- 1 bunch purple sprouting broccoli
- 1 tbsp extra virgin olive oil
- 2 tbsp soft goat’s cheese
- 10 kalamata olives, pitted
- 1 tbsp capers
For the dressing:
This recipe is a simple and delicious way to make the most of the first crop of purple sprouting this season!
Start by pre-heating a chargrill. Toss the broccoli stems in the olive oil with some salt and pepper before charring on the grill until lightly cooked and crispy.
In the meantime, make the dressing by combining all of the ingredients in a jug and whisking together. Season with salt and pepper.
Divide the broccoli between two plates and scatter over the goat’s cheese, pitted olives and capers. Finish with a generous drizzle of the dressing before serving.
