Perfect for barbecue enthusiasts and anyone who loves food and the great outdoors, We will prepare two impressive open fires in our stunning Market Garden, the group will have fun experimenting with different methods and a variety of dishes, including cooking directly on the fire, cast iron cooking, marinades, grilling seasonal vegetables and more.

Market Garden Gather & Cook

This course is a special opportunity to spend a morning exploring and harvesting the freshest, most flavourful crops in season from our Market Garden, which is normally closed to the public. When the baskets and trugs are full, the group will pause for an appetising snack prepared by our chefs before returning to the Cookery School to transform the haul into delicious meals, guided by our Tutors.

Daylesford Seasonal Salads

Join us for this half-day course to create delicious salads inspired by the produce grown at Daylesford all year round! Our Tutors will teach you some of our best salad recipes using a variety of grains, pulses, root vegetables, seeds and fruit along with plenty of suggestions for variations for both hot and cold salads, accompaniments, dressings, dips and more.

Smoke Without Fire: Master The Barbecue

This full day course is designed to inspire you with confidence and ideas to take your Al Fresco eating to the next level. Whether you’re cooking fillet steaks, delicate fish, vegetables or even puddings, we’ll teach you failsafe techniques and skills that you can use at home. We will also cover a number of marinades, salads and accompaniments to make sure you can approach your next barbecue with confidence.

The Art Of Afternoon Tea

Our Afternoon Tea course is a firm favourite in our calendar, giving you the chance learn how to make delicious, show-stopping treats for teatime to enjoy in the garden this summer! After pouring you a glass of Prosecco, our Tutors will guide you through creating your own afternoon tea display including tarts, cakes, biscuits and savoury treats. At the end of the day, you will have plenty to take away so that others can enjoy the bounty too!

Journey Through Provence

Provencal cookery is rich with warm, summery flavours and recipes created with fresh, seasonal ingredients. We are lucky enough to have a glut of some of these wonderful vegetables and herbs in our organic Market Garden come summer, From olives, capers and herbs to beautiful fish, lamb and poultry, our Tutors will guide you through a series of classic flavour combinations and recipes, created to bring out the best of each ingredient we use.
