INGREDIENTS(Makes 20 slices)
- 200g rolled oats
- 50g pumpkin seeds
- 50g sunflower seeds
- 50g coconut chips, toasted and roughly chopped
- 30g goji berries, roughly chopped
- 20g dates, roughly chopped
- 20g puffed buckwheat
- 2 tsps matcha powder
- ¼ tsp salt
- 80ml honey
- 3 tbsp coconut oil
- 1 tsp vanilla extract
- 4 generous tablespoons nut butter
If you are yet to try using matcha powder in your cooking, this is the perfect place to start. These satisfying energy bars are filled with minerals, good fats and the benefits of fibre-rich natural ingredients. It is worth noting however that nutrient dense does not always mean low calorie, and though made with natural sugars, recipes such as this should always be enjoyed in moderation. Enjoy as a filling afternoon pick-me-up or as valuable fuel before exercise.
METHODDIFFICULTY: Easy 30 MINS
Pre-heat the oven to 180°C and grease and line a regular brownie tin.
Spread the oats evenly over the base of the tin and scatter the seeds over the top. Bake in the oven for 8-10 minutes until the seeds are beginning to pop and the oats are just starting to turn golden.
Transfer the oats and seeds to a bowl and add the coconut chips, goji berries, puffed buckwheat, matcha powder and salt. Mix together thoroughly.
In a pan over a medium heat, melt the honey, coconut oil, vanilla extract and nut butter. Pour over the mixture in the bowl and stir everything together until evenly coated.
Press the mixture back into the lined baking tray and refrigerate for at least an hour before slicing.
