Organic Beef Silverside Joint 1.2kg | 2.4kg
£17.99 – £34.99
Cut from the thigh muscle, silverside has a robust texture with distinctly chunky grains. Best cooked low and slow to make the most of its natural flavour. Silverside is traditionally used to make salt beef or corned beef. If roasting whole, baste regularly or add liquids to the roasting pan to keep this lean cut beautifully juicy.
We favour traditional and rare breeds and our organic beef herd comprises South Devon, Gloucester and Aberdeen Angus animals, all raised on grass pasture and wild forage. We dry-age our beef to ensure the best possible flavour.
Weight: 1.2kg = 2.6lbs = 42oz | 2.4kg = 5.2lbs = 84oz
To cook, first sear the Silverside on medium-high heat for a deep caramelised flavour and golden-brown colour, add liquids like wine, stock or vegetables according to your preferred recipe and then cover the casserole and transfer carefully to the oven at 155°c-160°c. Cook for 2 ½ -3 hours, or until the beef is very tender. Check your recipe for specific cooking instructions and timings
